Does anyone know of an easy way to peal a butternut squash, My wife makes a great Squash Pie but hates to peal them. I tried to peal one an was lucky I got away with all my fingers. [img]/forums/images/icons/grin.gif[/img]

Slice the squash up. Then cut the rind off. Use a large sharp knife for the slicing. A smaller paring knife will do for cutting off the rind.

We do it the easy way, bake it with the skin on, then spoon it out when done. That takes no effort at all. Likewise, you can micro wave it with a little water cut up in big chunks, then remove skin when squash is done and soft.
My wife does about the same thing with pumpkins, too; cut'em up and cook'em in the microwave a little bit, then it's easy to remove the peel.
