Boiled Eggs
Is there a sure fire method to boil and peel eggs without the shell sticking to the egg? Fresh eggs Vs store bought seem to be different. Sometimes I get it right sometimes I don't. I drop the eggs in boiling water and then run cold water when they are done, usually works but not today [img]/forums/images/icons/mad.gif[/img]

Al, I don't really know, but have always been told that the fresher an egg is the harder it is to peel the shell off clean. I put the eggs in the pan to start with, then run enough water in the pan to cover them. And like you, I run cold water on them to cool them just enough to handle before peeling them. Of course all we have is store bought eggs now, so I never really know how fresh they are.

I recently changed methods: Put the eggs in a pot and cover with cold water. Bring the water to a boil, remove from heat, cover and leave for 10-15 minutes. No ugly grean stuff around the yolks this way - they stay nice and yellow. As for peeling, I drain the water when they're done and just shake the pot around. Run them under cold water for a minute or two - the shells sometimes just fall off.

pvenben, I assume you changed because the old way didn't work so good. What was the old way? Identifying what doesn't work may lead to what does. Your way sounds much like Bird's with a 10-15 minute wait after they are done boiling.Are the eggs from the store or from your chickens? I learned this in cooking school, hope it helps. Put eggs in pan cover with cold water, bring to a rolling boil, turn off heat and let set 20 mins or so, then cold water and peel. I have let them sit for hours until I was ready for them. Sometimes the peel still sticks, something to do with the freshness of the eggs. Good Luck Mac

I also find this is the best method to avoid sticking sheels: 1) put eggs into cold water; 2) turn on heat and bring to boil for 20 minutes; 3) remove from stove and immediately run under cold water for 2-3 minutes.
I also have this real "tip" -- put 1 teaspoon of vinegar into the water before it boils. I have no idea why this would have any effect but it does seem to work. I make a lot of hard boiled eggs, and maybe out of 20 dozen, I'll get 2-3 eggs, if any, with sticky shells problem. The only possible drawback is if you let the eggs boil too hard, the shells may crack and the eggs might have a slight vinegar taste. YMMV. [img]/forums/images/icons/laugh.gif[/img]

I buy enough eggs to let on or two dozen sit for a week or week and a half in the fridge so they are not too fresh. Put them in cold water and bring to boil. Turn off buner and let cool in pot.
I don't get the green area around the yolk and I have little problem with shell sticking.
Hakim: the vinigar works because it is an acid and will attack the calcium carbonate in the shell, which in turn softens the shell.
Here is something cool to do. Put an egg in a glass and cover with vinigar. Change the vinigar every 2-3 days and soon you will have an egg with no shell and the intershell membrane will hold it all togther. It's cool and kids love it.

I also heard you can put salt in the water prior to boiling. Changes the pH (probably also to acidic).

Yep, Put em' in a pan, add enough Vinegar to cover them, boil, repeat until the shells disapear Presto "Pickled Eggs"

The old way was to boil them in the pot. Two things I don't like about this method: 1) if you let them go too long you get that green/grey yolk thing happening. I'm pretty sure it's only a cosmetic thing. 2) unless you have the correct amount of eggs in the pot (so they can't move around too much in the boiling water) they can break before they are set.
And the eggs are store-bought, for now.

I haven't been to this board in a while and I come back to find this interesting topic. Sometimes mine stick and sometimes they don't. This will give me some new methods of cooking to try. I've almost come to the point of sending away for one of those gizmos that I recently started seeing advertised on the tube. You tap one end of the egg where the air pocket is, set in in place, press on a plunger and air is forced between the egg and shell giving you an egg with no shell and a couple big pieces of shell sitting on your counter. It probably works as well as all those other "$19.99 and we'll send you this, too" inventions.

Why not try and poke a pin hole in the end and then blow on it. Used to empty birds eggs this way but had a hole in each end.

Let me know how it turned out. I have several other thinks that you can do with boiled eggs that kids love and it povides them with physics lessons at the same time.

The egg peelers arrived a week or two ago and I finally got to test it out. This is the one that uses water to seperate the shell from the egg.
I found that the only faucet it fit on was in one of the bathrooms! The small end of the rubber gadget is stretched over the faucet spout, and my kitchen faucet has no protruding spout. So all the eggs have to be peeled in the bathroom. I'll admit that it detracts a little from the "apeel" of the process.
After the gadget is attached and the boiled, and cooled, eggs are on hand, just crack the shell on both ends and remove a little of the peel on the small end. And be sure to remove a little of the membrane too. Then turn on the water and shove the small end into the peeler. The egg pops out the bottom of the shell and the shell is mostly in one piece.
Works OK, but walking to the bathroom to peel eggs is a little of a pain. And I promised photos, but my wife wants nothing to do with this project! So, sorry, no photos.
Conclusion:
Be sure your kitchen faucet, or other proposed peeling location, has about 3/8" or more of spout available for attachment.
It works as advertised.
A third hand to catch the egg as it's ejected from the shell would be handy. A bowl or colendar would probably work fine.
Price is right.

I just read the "Boiled Eggs" posts............
as a twist on that, How do you keep hard-boiled eggs from rolling off the plate??? You cube 'em.
I bought an egg cuber at the flea market in Oldsmar, FL.
1st, hard boil it any way you like, but you have to peel them while they're hot. I peel under warm running water (not me, the egg).
2nd, put them in the "cuber" (It's like a square plastic box with a screw on lid), and let them cool in the fridge for a half hour.
3rd, pop them out and decorate like dice.
