I am going to make pork chops tonight. I was actually thinking about searing the pork chops and making a kind of cheesy stew. I have never seared pork chops before, only beef.
I made some of the best chicken enchiladas I have ever eaten. They are a favorite in my house and I make them a couple times a month.
I take cooked diced chicken and mix it with 1 cup of sour cream, small can of chilis and 1 1/2 cups of monterey jack cheese. Then you put 1/3 cup of chicken mixture in each tortilla shell. Pour 1/2 cup of enchilada sauce on bottom of 13 x 9 pan and then place the enchilada seam side down. top with 1 1/2 cups of enchilada sauce and 1 cup of cheddar cheese.
Tonight we are having chili!
