    Sufice it to say that cayane peppers are what is typically sold as red pepper (ground). There are lots of other peppers that are red. It is a bit like saying Kleenex instead of facial tissue of which there are lots of other brands. Still, you ask for a Kleenex and expect to get whichever tissue is handy.

    There are worse confusions to be made with peppers. A friends dad was making LBJ chilli and assumed that when the recipe called for chilli powder that was the same as powdered chillis. It isn't and wasn't. His batch was just sort of thermonuclear.
