    Canadian bacon?

    Egon, or any other of you folks north of the 49th parallel: we call it Canadian bacon. How do ya'll refer to this meat? [img]/forums/images/icons/laugh.gif[/img]

    I've been marinating a big boston butt since New Years day.
    Going in the smoker in the morn for a long dose of hickory smoke, buckboard bacon!

    Also trying a new to me recipe while I got the smoke rolling. Soak 2 cups of raw shelled peanuts in 1 cup of hot sauce overnight. Spread over some window screen, salt to taste, and smoke 1-2 hours, fire goobs!

    I just put 5 lbs of peanuts in with a quart of Texas Pete hot sauce and they're soaking it up like cornbread, how many beers ya'll think it'll take to wash 'em down?

    Let us know how those peanuts turn out. You know I'm a peanut addict; buy roasted peanuts in the grocery store when I can't find raw ones, but the best are the raw shelled jumbo Spanish peanuts that I roast in the microwave oven (stirring frequently), and then add butter or margarine and salt. I've never really cared much for the highly seasoned, honey roasted, etc.

    I'm a nut-aholic also, not knowing how to stop eating them until they're gone. With these hot nuts, an alarm goes off after a couple handfulls telling you you'd better stop!

    Dang good, and I rarely say this but they're TOO hot. They soaked up all the sauce. I was told the smoke took some of the heat out but I think it worked the opposite. I'll definitely give it another go but with much less heat.
