    Easter Sausage

    I usually make smoked Easter sausage and with easter around the corner I made some. 125#'s of smoked.

    I never heard of "Easter sausage" before, but it does look good. There are so many different "sausages" that I don't know which is which most of the time. We recently bought some smoked "German" sausage and fixed it the same way we usually fix Brats, except of course I had to cut it in shorter pieces first because it was some long links and looked like your Easter sausage. We like it a little better than the Brats, but when I asked the guy behind the meat counter what was different, he said their German sausage is just a simpler recipe with fewer seasonings.

    I'm hungry now. Just can't beat good sausage.

    Back many years ago we made sausage and smoked it. Real fun part was cleaning the casings. [img]/forums/images/icons/grin.gif[/img]

    It's actually Smoked Polish sausage. I just make it for Easter. There isn't any such thing as a brand name of Easter sausage. I also make it for Oktoberfest and Christmas.

    I'm sorry I'm not there to help you eat it. Polish sausage sandwiches with mustard on whole wheat along with a bowl of ranch style beans makes a mighty fine meal.
