One of my favorites

Italian Breaded Pork Chops

INGREDIENTS
3 eggs, lightly beaten
3 tablespoons milk
1 1/2 cups Italian seasoned bread crumbs
1/2 cup grated Parmesan cheese
2 tablespoons dried parsley
2 tablespoons olive oil
4 cloves garlic, peeled and chopped
4 pork chops
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C).
In a small bowl, beat together the eggs and milk. In a separate small bowl, mix the bread crumbs, Parmesan cheese, and parsley.
Heat the olive oil in a large, oven-proof skillet over medium heat. Stir in the garlic, and cook until lightly browned. Remove garlic, reserving for other uses.
Dip each pork chop into the egg mixture, then into the bread crumb mixture, coating evenly. Place coated pork chops in the skillet, and brown abut 5 minutes on each side.
Place the skillet and pork chops in the preheated oven, and cook 25 minutes, or to an internal temperature of 160 degrees F (70 degrees C).

Place chops on a plate or marinade container.
Slice lemon, and squeeze over chops
Sprinkle with Mustard powder, salt, and pepper(I use garlic powder too on occassion)
Let sit for a half hour to an hour.
In a skillet, lightly brown chops
Pour can of stewed tomatoes over shops(should cover them).
Cover and bring to a slow simmer
Simmer till cooked through and tender.
Serve with some spatzle(sp?)

I must lead too boring of a life. I have never found Spätzle (need umlaut over the "a") anywhere but on my plate at a German eatery. Like it but don't know how to make it and NEVER seen it is a market.

Run a Google Pat and there will be at least two different recipes for Spaetzle!!! Basically they are noodles that made at time of usage. [Flour, milk, eggs, salt, ???? ]

There is a goord German style deli in Sacramento, about 45 minutes from here. Has been there for years. I have recipes too, but have never tried making it.

For the best pork chops you will ever eat just marinate them in Itailian Dressing right out of the bottle. I have gone from 1 hour to overnight. Then put them on a hot grill and baste with the leftover marinate. They cook quick and stay juicie and tender. YUMMM!
