Carrot cakes

I just attended a small party where carrot cakes are served. They were so delicious, I love them. Any of you has ever make a carrot cake? Care to share the recipe here?

I first had carrot cake back in high school. It was a good friend's mother's favorite, and once I had it, I really loved it. I've only made it a couple of times, though, and always from a mix. Maybe someone can share a recipe that I'll try as well.

My mom has a great recipe so i will have to get it from her and share it here. I love carrot cake but only homemade, I cannot eat boxed.
