    Canning Fears

    I received a whole bunch of tomatoes and need to can them. I am really intimidated by canning though; any tips to ease a newbie's fears?

    Use the canning book and follow the directions exactly. Do this every time you can. You will be ok.

    My wife is scared of the pressure canner, as a retired boiler operator, I do all the canning that requires the pressure canner. I use the book each and ever time I can, no matter how many times I have csnned the same thing. No problem yet. Have fun and stay safe......

    You should consider making sauces if you have enough tomatoes. My friend made an Italian sauce a couple of years back and then canned it. It was delicious. I still have a couple of jars. I am hoping she makes more soon.

    Thanks for the encouragement, and making sauces is a great idea too; why didn't I think of that? I have so many I could make some sauce and some diced tomatoes.
