    Freezing fruit

    Can anyone recommend the best way to freeze fruit? I wasted an awful lot of plums last year because they got ripe and rotten before I could eat them all. This year I'd like to freeze a lot of them but should I do it just before they are fully ripe or not?

    You should freeze them at the same point at which you would eat them normally. If they are unripe they will taste bad and if they are too ripe they will be mushy and nasty. You need to prepare them in a sugar solution like they do here: How to freezeÂÂÂ* peaches, nectarines and plumsÂÂÂ* (complete directions with photos)

    Most manufactured of frozen fruit have methods to "Quick freeze" their products, there is a method in which you can do the same at home.
