    jerky, jerky, who\'s gotta smoker recipe for jerky

    Well... I pulled a recipe off the net, from a recipe site, and it had a note that is was from the folks who make the Little Chief smoker(which I have). My son wanted to make jerky, and I was game to try it.

    This stuff had salt, soy sauce, and some other salt heavy stuff. And, it siad to smoke for 12 hours. We made it up and soaked it over nite. I put it in the preheated smoker, and ran two small pans of chips. It was our first time, so I let it go... Well, after 8 hours it was dried solid as a rock... I kind of wonder if I got it too hot; I keep the smoker in the box for cool weather(it's a top loader), and am in the habit of just leaving it in there.

    Anyone have a recipe that's light on the salt, and not too crunchy? [img]/forums/images/icons/wink.gif[/img]

    Many years in the past I did make some jerky. No recipe but marinating ingredients were.

    Beer, soya sauce,hot pepper,whochester sauce,lemon juice, garlic.

    I just did some from flank...

    Marinated for 24hrs with Hi Mountain Cracked Pepper and Garlic blend.

    Smoked for 5 hours with hickory chunks

    Then finished drying with a box fan and the jerkey sandwiched between 2 furnace air filters (no, I didn't learn this from the food network [img]/forums/images/icons/grin.gif[/img], my dad showed me this when I was a kid).

    Well, this week was my first time to make any jerkey, and I think it turned out great. I just experimented with a few different sauces and flavors that I've always liked. I really like my jerkey sweet, and not very salty, so here I go:

    1 pound Elk Steak (or whatever you have)
    1 can of beer
    1 can of Coke
    1/2 cup of brown sugar
    4 lid fulls of liquid smoke
    12 cup Marinade with Lime (somethin new I guess)
    Few sprinkles of lemon Pepper (gotta have a little grit!!!!!!!!)

    Let meat soak for 24 hours. Put in Dehydrator for 9 hours.

    I got my first taste of it this morning, and I'll tell you what, I wouldn't be postin' this if it tasted bad!!!!!! Even the Wife liked it!!!!!!!!!(and we all know how hard they are to please!!! [img]/forums/images/icons/grin.gif[/img] [img]/forums/images/icons/grin.gif[/img]) (jk honey!!!!!)

    Anyways, it was worth a shot, and guess what I'll be doin all weekend!!!!!!!!!!!!!!!!!!!!!!!!!
