I know what you mean Peppercorn. I bake for my children carrot cake and such. I have never had a beetroot cake. Would you share the recipe?
I make stuff and grind up veggies to put them in it. It hides things well. My friend made healthy muffins the same way, so her kid would eat it.
My first thought was to just tell them they have to eat their veggies. How quaint can you get. Nowdays they would probably call Child Protective Services on their parents..... >
There is an amazing cookbook that was created for this purpose. Every recipe has a secret vegetable in it that you can't even taste. Plus it has a lot of helpful advice. You should get one, they have it at borders.
